Sprouted Mung Beans

Serves 4

  • 1 cup sprouted mung beans (Youtube video link shows you how to do sprout your own mung beans)

  • 2 tablespoon oil

  • 2 teaspoon roasted cumin seeds

  • 1 dry chilli (optional)

  • 2-3 chopped curry leaves (optional)

  • Pinch of asafoetida

  • 1 teaspoon turmeric

  • 2 teaspoons red chilli powder

  • Salt to taste

  • 1 teaspoon green chilli, garlic and ginger paste

Method

​

  1. Heat oil in a pan on high heat, add roasted cumin seeds, dry chilli, curry leaves and asafoetida.

  2. Stir in sprouted mung beans, adding turmeric, chilli powder, salt and chilli, ginger and garlic paste.

  3. After a few minutes, add a splash of water and stir for 4-5 minutes.

  4. Serve as a light starter, in a wrap or as a salad side.
