FRUITY SPICY CHAI MUESLI BITES

sobhna's fruity spicy chai muesli bites recipe

INGREDIENTS

  • 3 cups of rolled oats

  • 1 cup of jaggery

  • 1 cup chopped almonds and cashews

  • Half a cup sultanas or raisins

  • Half a cup of chopped dry apricots

  • Half a cup desiccated coconut

  • 1.5 teaspoon of Sobhna's Chai Masala

METHOD

  1. Lightly dry roast your rolled oats in a wok on medium heat for 2-3 minutes. Take off heat and place oats into a bowl.

  2. In the wok, add the jaggery and melt on a medium heat. Once melted, stir in the oats on a low heat until mixed together.

  3. Stir in chopped nuts, sultanas, apricots and desiccated coconut. Keep stirring on a low-medium heat until it all starts to come together. At this stage, if the mix isn’t coming together you can add a little more jaggery. This process usually takes 5-7 minutes, but keep stirring so it doesn’t burn.

  4. Add the chai masala while continuously stirring for the last minute.

  5. Pour into a lightly greased tin and allow to cool at room temperature before slicing into bite-sized squares.
